SHORTBREAD:
- 1 cup plain flour
- 7 Tbsp. unsalted butter, chilled and cubed
- 2 1/3 Tbsp. sugar
- 1 tsp. Arctic Thyme Salt, plus 1/2 tablespoon for sprinkling
Put the flour, butter, salt and sugar into a mixing bowl. Use your hands to combine the ingredients until the mixture looks like breadcrumbs, then squeeze until it comes together as a dough.
On a lightly floured surface, roll out the dough to ½ cm thick. Cut the dough into rectangles and place on a lined baking tray. Use a fork to create texture, then sprinkle with the remaining salt.
Chill the dough in the fridge for 20 mins. While dough is chilling, pre-heat the oven to 175°C / 350°F. After dough is chilled, bake for 15-20 mins until golden brown. Remove the shortbread cookies from the oven and leave to cool on a rack.
