CARAMEL:
- 1 stick butter
- 1 cup cream
- 4 tbsp. water
- 8 tsp. glucose syrup
- 1 cup sugar
- Saltverk Birch Smoked Salt
Mix the water, glucose and sugar in a pot and warm up to 320°F. In another pot, warm up the butter and cream and mix together. Slowly and carefully blend the butter and cream mixture into the contents of the first pot. Heat to 240°F. Pour mixture into greased baking form. Sprinkle salt on top immediately. Allow to cool.
